HOLIDAY TURKEY & SWEET POTATO BOWL

Holiday Turkey, Cranberry Sweet Potato bowl

Ingredients

Makes 2

  • 2 medium sized yams (garnet yam)

  • 1/2 cup cranberries (fresh)

  • 1/4 chicken broth

  • 1 lbs ground turkey

  • 1/2 cup chopped celery

  • 1/2 onion diced

  • 1 tbsp tomato paste

  • 1/2 cup diced tomato (canned works)

METHOD

  • Poke a few holes in the sweet potato, line a baking sheet with foil and roast 425 for 30 minutes. leave in oven for additional 10 until soft and can be pierced through with a fork.

  • Next in a large skillet, heat tsp of oil and add the onions. Saute until fragrant, then add the ground turkey. Using a wooden spatula to break up the meat.

  • Once meat is 70% cooked through, add the celery and cranberries. Combine the mixture and add salt and pepper

  • Once everything is incorporated and turkey is no longer pink, add chicken broth, tomato paste and tomatoes.

  • Continue to saute until cranberries and celery are soft.

  • THAT’S IT!

PLATE

  • Top over the sweet potatoe, drizzle honey and cottage cheese and you would have just created a lean, protein heavy, holiday delicious bowl of goodness!
