FRESH CORNBREAD CAKE W MISO BUTTER GLAZE
Fresh Corn Cornbread Cake with Miso Browned Butter Glaze
Ingredients
Whisk into a mixer the wet ingredients:
1 and 1/2 cups corn kernels (fresh preferred)
1/2 cup whole milk
1/2 cup sour cream
2 large eggs
1/4 cup melted butter
1/3 cup neutral oil ( i used avocado)
2 tablespoons honey ( I love this local one)
1 tablespoon vanilla
Dry Ingredients:
3/4 cup all purpose flour
1/2 cup fine yellow cornmeal
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
Mascarpone addition
1/4 cup mascarpone, room temp
(fold in at the end for extra velvet texture)
Optional texture boost
1/2 cup extra whole corn kernels
Optional crust
2 tablespoons brown sugar sprinkled on top before baking
1. Prep
Heat oven to 350 F. Line an 8 by 8 or 9 inch pan with parchment and oil sides.
2. Blend the wet base
Blend corn, milk, sour cream, eggs, melted butter, oil, honey, and vanilla until smooth and creamy.
3. Mix dry ingredients
Whisk flour, cornmeal, sugar, baking powder, baking soda, and salt in a bowl.
4. Combine
Pour the blended mixture into the bowl of dry ingredients. Gently fold until just combined.
5. Add mascarpone
Fold in the mascarpone. It will give the batter a glossy, silky look. Add whole kernels if using.
6. Bake
Pour into the pan. Add brown sugar on top if you want a caramelized crust.
Bake 30 to 38 minutes. A toothpick should have moist crumbs on it, not come out clean.
Cool 15 to 20 minutes before adding glaze.
Mis Honey Brown Butter Glaze
Ingredients
4 tablespoons unsalted butter
1 and 1/2 tablespoons white miso
2 tablespoons honey
2 tablespoons powdered sugar
1 teaspoon vanilla
Pinch of salt
1 tablespoon hot water or cream if you need to thin it
1. Brown the butter
Cook butter over medium heat until golden and nutty. Remove from heat.
2. Dissolve miso
Whisk in the miso right away. It will melt into the butter.
3. Add remaining ingredients
Add honey, powdered sugar, vanilla, and salt. Whisk until smooth and glossy. Thin with a splash of hot water or cream if needed.
4. Glaze the warm cake
Pour over the cake while still slightly warm
