Spaghetti Vongole

Ingredients:

  • 1/2 lbs clams

  • 4 cloves garlic

  • 1/4 cup parsley

  • 1/4 cup white wine

  • 1 tbsp olive oil

  • 2 tbsp lemon juice (1 lemon)

  • pinch salt & pepper

  • pinch red pepper flakes

  • 1/2 cup pasta water

  • Spaghetti

Step by Step:

  1. First soak your clams in salt water to get out all of the sand, repeat until all sand is removed

  2. Then, chop your garlic and parsley, then juice your lemon

  3. While you are soaking the clams, start to boil your water and cook your pasta in a separate pot, when finished, strain and set aside

  4. Once your clams have released all sand you are ready to cook them

  5. In a pan with a lid, add your olive oil and garlic, cook on medium high heat

  6. When fragrant, add the white wine, clams, and red pepper. Cover, turn heat up, and steam for about 5-7 minutes

  7. Once clams have opened, discard any that did not

  8. Now, you are ready to add your pasta!

  9. Add the cooked pasta to the clams and add your parsley, lemon juice, salt and pepper, and pasta water!

  10. Give a good mix and serve onto your favorite plate!

  11. Top off with a lemon wedge, any leftover parsley, and grate some parmesan if you have any! Enjoy!
