Yaki Udon

Ingredients:

  • ½ onion, sliced

  • 2–3 leaves green cabbage, diced

  • 2 inches carrot, sliced

  • 2 green onions/scallions, 1 in. chopped

  • 6 oz sliced pork belly

  • 2 servings udon noodles

  • 1 tbsp neutral oil (for cooking)

  • Salt (to taste)

  • Pepper (to taste)

Seasoning:

Step by step:

  1. Start by boiling water in a pot

  2. In a separate pan, heat the oil and add the pork belly, cook until no longer pink

  3. Then, add in the onion, cook until fragrant

  4. Then add in the rest of the veggies, mix together.

  5. Cover and let steam for 3 minutes

  6. While the veggies are steaming, cook the udon according to package (usually about 1 minute)

  7. Once the veggies are done steaming, add in the seasoning, mix and combine

  8. When all combined, serve and enjoy!
