easy chicken meatballs

Ingredients:

  • For the meatballs

    • 1 lb ground chicken

    • 1 tsp sake

    • 1 tsp soy sauce

    • 1 egg

    • 1 knob ginger (grated)

    • 2 atsuage (deep-fried tofu)

    • 1 long green onion

    • avocado oil

    • pinch of salt

    • handful of panko bread crumbs

  • For the sauce

Step by Step:

Make your sauce first

  1. Chop off the green part of green onion and add to a pot

  2. In the same pot add the soy sauce, sake, mirin, and sugar

  3. Bring to a boil over high heat. Once boiling reduce to low heat and let simmer until the sauce has reduced to about 1/3 of the original sauce. It will take about 30 min.

  4. Once thickened, turn off heat and let cool to room temp before using

Cook the meatballs

  1. Chop the white parts of the green onion, very thin. Then chop your atsuage into to tiny pieces

  2. In a bowl dump your ground chicken, sake, soy sauce, salt, panko, atsuage, white part of green onion, ginger, and egg

  3. Mix together with your hands

  4. Then shape your meatballs into 1 - 1.5 inch balls and place on a baking sheet to rest before cooking

  5. Once all the meatballs are formed, in a large pan spray it will avocado oil

  6. Let the oil heat on medium, once warm, place your meatballs into the pan and cover with lid or foil.

  7. Let cook for about 3 minutes. Flip and cook the other side, covered

  8. They should be golden brown on each side. You can cut one open to check to see if they are cooked.

  9. Once finished, serve in your favorite bowl with rice, an onsen egg, drizzle with sauce and top with some more green onion! Enjoy!
