quick & easy green pasta

Ingredients:

  • 1 cup spinach

  • 1 whole lemon

  • 1/4 cup pine nuts, toasted

  • 4-5 cloves of garlic

  • 2-3 sprigs of green onion, chopped

  • 1 large ripe avocado, peeled

  • 1/4 cup parmesan cheese, grated

  • 1/4 cup fresh basil

  • 1/4 cup plain greek yogurt

  • 1 cup rotisserie chicken, shredded

  • 1 cup pasta water

  • S&P to taste

  • Your favorite pasta (I used spaghetti)

Step by step:

  1. Start by boiling your water, cook pasta accordingly to package

  2. While pasta is cooking, in a small pan toast the pine nuts and garlic with olive oil til browned

  3. Once finished, in a blender add the spinach, lemon, pine nuts, garlic, green onion, avocado, parmesan cheese, basil, greek yogurt, S&P, and pasta water, blend til smooth

  4. Once your sauce and pasta are ready, strain the pasta and add back to a large pan.

  5. Pour the sauce over the pasta and mix til combined

  6. Serve in your favorite dish and top off with some extra parmesan cheese, S&P, and basil! Enjoy!
