Teriyaki Butter Chicken

Ingredients:

  • 1 lb boneless chicken

  • 1/4 tsp salt

  • 1/8 tsp ground pepper

  • 1 tbsp olive oil

  • 4 tbsp sake

  • 1 tbsp unsalted butter

For the sauce:

  • 2 1/2 tbsp soy sauce

  • 2 tbsp sake

  • 1 tbsp mirin

  • 1 tbsp sugar

Method:

  1. Clean and slice the chicken thighs in half

  2. Season both sides with salt and pepper

  3. In a small bowl, combine all the sauce ingredients, mix till sugar is dissolved

  4. Heat a large pan over medium heat, once hot, add olive oil. Add chicken skin side down to pan, cook till brown about 4-5 min

  5. Once the skin is nicely browned, flip and cook another 3 min

  6. Add sake and cook covered until cooking liquid is gone

  7. Remove the lid and wipe off excess oil on the pan with a paper towel

  8. Add the sauce and butter, spoon the sauce over the chicken a few times

  9. Serve with your favorite veggies! I ate mine with broccoli! Top off with extra sauce from pan & Enjoy!
