The BEST Sardine Sandwich
THE BEST SARDINE SANDO
Serving size 1
1 can of sardines ( i love this one) - don’t drain fully bc we’ll use the oil to marinate the salad
2 slices of sourdough bread toasted
1/2 celery (thinly sliced on mandolin)
1/4 apple (slice on mandolin)
1 baby persian cucumber (slice on mandolin)
1/8 purple onion (slice on mandolin)
1 tsp capers (& drizzle of caper juice)
Drizzle of olive oil
salt & pepper to taste
Greek yogurt plain for the spread (or you can use mayo)
Method:
Toast the bread. Then make the salad. Thinly slice on mandolin the celery, apple, cucumber, and onion. Combine in a medium bowl and drizzle sardine oil, caper juice and capers. Top with dash of olive oil, salt and pepper to taste and let it marinate while you prepare the bread.
After the bread is toasted, spread greek yogurt or mayo. Top one side with sardines and the other with the marinated salad. Slice in half and ENJOY!!! It’s especially good with pickles.
