MARBLED BLACK SESAME BANANA BREAD
Ingredients:
Wet:
3 very ripe bananas (about 1¼ cups mashed)
2 large eggs
½ cup melted browned butter
½ cup honey or maple syrup
¼ cup plain yogurt or sour cream (adds moisture and tang)
1 tsp vanilla extract
Dry:
1½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
Topping (optional):
Black sesame seeds for garnish
Banana slices
Step by step:
Preheat oven to 350°F (175°C). Grease or line a 9x5” loaf pan with parchment paper.
Mash bananas in a large bowl until smooth. Whisk in eggs, oil, honey/maple syrup, yogurt, and vanilla until combined.
Split into two separate bowls - so you can create a plain and a black batter.
In another bowl, whisk together the all-purpose flour, almond flour (if using), baking soda, salt, and cinnamon.
Add half the dry ingredients to each wet ingredient bowl and stir until just combined — don’t over mix.
Then, add in the ground sesame to ONE of the bowls. So you have one plain batter and one black batter
Layer and swirl:
Add a layer of the plain batter to your loaf pan.
Spoon in some black sesame batter.
Alternate between the two batters, layering and dotting in.
Use a butter knife or chopstick to gently swirl the two together with a few figure-8 motions. Don’t overdo it—just enough to create a marble pattern.
Top it (optional): Sprinkle black sesame seeds, or a few banana coins
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. If it’s browning too quickly on top, tent with foil halfway through.
Cool in the pan for 10–15 minutes, then remove to a wire rack to finish cooling.
