BANANA BOAT BRÛLÉE

Ingredients:

  • 3 bananas (fills 2 boats)

  • A bit of brown sugar (for caramelization and torching)

Step by Step:

  1. Slice the bananas lengthwise, as if making a little boat with a removable lid

  2. Keep the flesh of two bananas and take out the insides and caramelize it in a pan with brown sugar and the scraped vanilla bean.

  3. Add the milk, gently mash the bananas into the mix, and let simmer for five minutes. Strain through a fine sieve to remove the excess banana bits.

  4. After straining the banana milk mixture, return the liquid to the pan.

  5. Whisk in protein powder until smooth (optional, if adding protein)

  6. Then add the cornstarch, whisk again, and heat until thickened and becomes smooth and creamy

  7. Fill your banana “boats” with the cream and refrigerate for 3 hours

  8. When ready to serve, sprinkle the tops with brown sugar and use a kitchen torch to create a crispy brûlée-style crust.
