Japanese Cold Somen Noodles

Ingredients:

  • For the noodles:

    • 1 bundle dried somen noodles

  • Dipping Sauce

    • 1/4 cup mentsuyu/tsuyu

    • 1/2-1 cup Iced cold water

  • Garnishes

    • 1 knob ginger

    • ginger

    • daikon radish

Step by step:

  1. Combine the mentsuyu concentrate and iced water in a measuring cup and mix well

  2. First grate the ginger, put on a plate where all you garnishes will go. Grate a small amount of daikon, gently squeeze some of the liquid out, then place on plate. Rinse and thinly slice okra, julienne slice the cucumbers, and halve the cherry tomatoes

  3. Now, you are ready to cook the somen noodles. Bring a large pot of water to a boil. When the water is boiling, add the somen all at once, spreading the noodles around the pot in a circular motion to separate each strand

  4. Stir occasionally, cook for 2 minutes and 45 seconds or according to the package instructions

  5. Once they are done cooking, strain and rinse under cold running water. When finished, transfer to a large bowl of ice water with ice cubes

  6. Once they are cooled, get your garnishes and sauce ready.

  7. Plate the noodles in trainer on top of a bowl of ice! Now, add noodle and add your favorite garnishes into sauce! Enjoy!
