homemade tomato soup

INGREDIENTS:

  • 7 -10 large ripe tomatoes, diced and seeded

  • 8 cups chicken stock

  • 1 cup basil

  • 1 yellow onion, diced

  • 2 carrots, diced

  • 2 celery, diced

METHOD:

  1. In a heavy bottom pot- sauté the diced onion with tbsp of butter until translucent.

  2. Add the diced celery, carrot, pinch of salt and pepper and cook until veggies are slightly softened.

  3. Next add the diced and seeded tomatoes, chopped basil and chicken stock and cover for 20-30 minutes on simmer.

  4. Remove from heat and use an immersion blender or high speed blender to puree.

  5. Serve with sour cream or greek yogurt , drizzle of oil, parsley, fresh cracked pepper, and a crispy grilled cheese!
