Halloumi Salad

Ingredients:

  • Halloumi cheese cut into bite sized pieces 

  • 1 whole cucumber, cubed 

  • 1/2 cup parsley, chopped 

  • 1 small zucchini cut into rounds and grilled 

  • Handful arugula or spinach 

  • 5 red radishes, chopped 

  • 1 cup quinoa cooked

  • 1 cup shredded chicken 

  • 10 baby plum tomatoes, halved

  • 1/4 cup pomegranate seeds

  • 2 spring onions, chopped 

  • Cava Lemon Herb Tahini Dressing

Step by step:

  1. Add olive oil to a pan and turn on medium heat

  2. While the pan is heating, slice the halloumi cheese and cut in half into little squares

  3. Once the pan is hot, add in the halloumi cheese, cook each side for about 3-4 minutes or until golden brown. I add salt and pepper to season

  4. While the halloumi cheese cooks, chop all the salad ingredients and throw into a salad bowl

  5. When cheese is done, let cool, then toss into your salad! Top with dressing and toss! Enjoy!
