Deconstructed fried rice

Ingredients:

  • 3 cloves garlic (minced) 

  • 2 scallions (chopped, white part only)

  • 1 cup cooked rice 

  • 1 tsp soy sauce 

  • 10 wild caught shrimp, peeled and deveined 

  • 2 eggs scrambled 

Step by step:

  1. In a nonstick frying pan over medium low heat add olive oil and cook the garlic and green onion until fragrant 

  2. Next add the rice and your soy sauce, mix to combine, then smash it down evenly on the bottom so it gets cooked and crispy (about 2 minutes) then flip and do the other side, set aside

  3. Next, heat olive oil in same pan, add the shrimps and s&p to season, cook 1-2 minutes on each side (pro tip: dont overcook so you get juicy shrimp) , set aside

  4. In a separate bowl crack the eggs and whisk 

  5. Then heat more olive oil add your eggs and cook for about 1 minute scraping the sides gently with a rubber spatula then turn heat off and let cook 

  6. On a plate, add your rice, egg, and top with your shrimp! Enjoy!
