curry udon

Ingredients:

  • 1/2 onion

  • 2 green onion

  • 1/4. napa cabbage

  • 1 carrot

  • 1 tbsp neutral flavored oil

  • 6 oz thinly sliced beef

  • 1 tbsp sake

  • 3 cups dashi

  • 2 cubes Japanese curry roux

  • 2 tsp soy sauce

  • 2 servings udon noodles

  • 1 onsen egg

Step by step:

  1. First, thinly slice the onion and carrot. Then chop the green onion and napa cabbage

  2. Preheat a pot on medium heat. When the pot is hot, add the oil and then your onions and carrots, saute for 2-3 minutes

  3. Then add and cook your meat til there is barely any pink

  4. Next, add the sake, dashi, and cabbage. Cover and reduce heat to medium low and let cook for 5 minutes

  5. When simmering, skim off excess fat

  6. In a separate pot, start boiling water to cook your udon, when the water is boiling add your udon and cook according to package

  7. After 5 minutes of simmering the stock and meat, turn off the heat.

  8. Next, put a cube of curry roux in a ladleful. With chopsticks or a spoon, dissolve the roux cube completely in the ladle, then add it to the soup and repeat with next cube

  9. Then, add soy sauce and mix, turn off your heat and cover to keep warm

  10. You’re ready to serve! Drain the noodles, and serve in a bowl, pour your curry in and top with green onion and onsen egg! Enjoy!
