2 Healthy PB recipes you have to try!

Today I’m pumped to talk about a wonderful whole food, that I sometimes spoon straight out of the container = PEANUT BUTTER :P

Peanut butter is a superfood of sorts because real peanut butter has 1 ingredient, peanuts! This one simple ingredient is blended into the nutty paste we know and love. Peanuts are an incredible source of healthy fats so I wanted to talk about exactly what that term, healthy fats, means.

When it comes to fats we separate them based on their chemical bonds: trans fats, saturated fats and mono/poly-unsaturated. Trans fats are not body or heart friendly and can be found in chocolate bars, chips, fast food etc. Saturated fats include those found in dairy products, meat and some vegetable oils. Mono or polyunsaturated are the ones we consider heart healthy like those found in fish oils, olive oil, avocados and seed oils like canola and peanuts!

I get Maranatha Peanut Butter because it's made up of only 2 ingredients- peanuts & palm oil!

Peanut butter is also incredibly versatile, I mean think about it - pad thai, energy bars, salad dressings, smoothies, overnight oats, the list goes on! So I wanted to give you guys TWO recipes that I've been enjoying using PB!

First up, PB & Strawberry Crepes! The crepe batter is gluten free and high protein! Paired with some fruit and of course peanut butter and you have a well rounded meal.  

Crepe Recipe Ingredients

1 cup oat flour

2 eggs (optional to use egg whites)

1 tsp honey

1/2 cup almond milk

1/2 tsp vanilla extract

1 tsp coconut butter liquified

Dash of cinnamon

pinch of salt

Add all ingredients to a mixing bowl and whip up the batter, let that sit in the fridge and while it’s chillin (literally) wash and slice some strawberries. Strawberries are in season af right now- so juicy, so sweet.

Once you’ve cooked up your nice flat little crepes, spread on ½ - 1tbsp of MaraNatha peanut butter and then layer in some strawberries and sprinkle dried coconut! I also drizzled honey at the end. Wrap em up and dive in - healthy, guilt free, DELICIOUS breakfast.

Next recipe is... my CHUNKY MONKEY ENERGY BALLS <3 They literally taste like the ice-cream and is my favorite pre-workout energy pump- up treat!

Energy ball ingredients

1 Ripe banana mashed

1 tbsp cacao powder

1 tsp maca powder

1/4 cup peanut butter

2 tbsp semi sweet mini chips

1/2 tsp cinnamon

1 tsp honey

1 tbsp coconut oil (liquified)

3/4 cup rolled oats

* optional 1/2 scoop protein powder

Add all ingredients to a bowl and mix really well. 

Stick the mixture into the fridge for about 15 minutes and lick your fingers and the bowl while you wait. Once it’s ready put a bit of coconut oil on your hands to roll into ping pong sized balls. You should yield 10-12 balls. 

Store in a air tight container and freeze them until you are ready to eat them: )
