Guilt -Free Holiday Brunch & 3 Easy Recipes
Name one person who doesn’t love brunch... wellll, we can’t be friends then, haha! I live for weekend brunches at home. It’s my favorite way to spend a Sunday morning - nice and slow, waking up a lil’ later, making pancakes, and catching up with friends or family. Brunch is the best!
A few weeks ago I wanted to do something nice for my family. I hadn’t spent much time with them over the last couple months since I’ve been so busy, so I thought - why not bring brunch to them and take advantage of their courtyard and have brunch in the fresh air!
Of course I went for a fall theme. My parents are super healthy too, so I made them a guilt-free brunch that they can indulge in without all of the sugary pastries and alcoholic mimosas making you feel lethargic afterwards. ((Even though those kind of brunches are great too, once in a while ;) ))
If you’re thinking about hosting a fall-themed brunch yourself, here are some 3 easy fall-inspired recipes I made!
For an on-arrival refreshment, I prepared a fresh cranberry lemonade! This was so easy to make and made me wonder why I ever bought pre-made cranberry juice before?? It’s loaded with sugar! Anyway, mine is sweetened with a touch of SPLENDA® Naturals Stevia Sweetener. I like to use this stevia sweetener because it's a natural, plant-based product with no artificial ingredients!
Here’s the easy recipe:
1/2 cup fresh cranberries
2 lemons, juiced
2 packets SPLENDA® Naturals Stevia Sweetener (or add more to achieve your desired level of sweetness)
Optional: Lemon slices, whole cranberries, and rosemary sprigs for garnish
Add the water, cranberries, lemon juice, and stevia into blender. Blend until smooth. Add ice and garnish with a lemon slice! My mom brought out some fresh rosemary and put a sprig in hers, which tasted really good and looked pretty too.
The main event was the Protein Pumpkin Spice Pancakes, Fruit Salad, pumpkin butter and Greek Yogurt Spiced Whip! Soooo good! Like so so, so good.
Protein Pumpkin Spice Pancakes - makes 6 pancakes
1 scoop vanilla protein (optional)
1 1/4 cup all purpose flour
1/4 c. Puréed organic pumpkin
1⁄2 c. organic unsweetened apple sauce
1 tsp pumpkin spice blend
1/2 tsp cinnamon
1 tsp mayo (my mom’s trick to making pancakes FLUFFY!)
3 packets of SPLENDA® Naturals Stevia Sweetener
1/2 cup almond milk (but you can add more to reach a smooth batter consistency)
Coconut oil to fry
Optional: fruits and/or nuts to garnish (figs, berries, pomegranate seeds, walnuts, pepitas)
Mix all ingredients in a bowl. Over medium low heat, pour about 1/4 cup batter for each pancake and cook until bubbles start to form, then flip to cook through.
I topped my pancakes with a fruit medley of figs, raspberries, pomegranate seeds, walnuts and dollop of store bought pumpkin butter.
Greek Yogurt Spiced Whip!
1/2 cup Nonfat Greek yogurt
1/4 tsp pumpkin spice blend
2 packets SPLENDA® Naturals Stevia Sweetener
Dash of cinnamon
1/4 tsp vanilla extract
Mix well and add a spoonful of this delicious whip to top off your pancake. You’ll probably be reaching for more of it, hehe!
Other fall touches on the table included a centerpiece bowl filled with fall fruits, acorn squash and a pumpkin. My mom also got a gorgeous flower arrangement that went perfectly with the fall theme!
