Easy Cauliflower Fried Rice Recipe
Whenever I go to the market, I try to fill my cart with as many colorful whole foods as possible. That means a ton of fruits + veggies. On my recent run to Trader Joes, I picked up a bag of nothing but "Riced Cauliflower" in the refridgerated veggie section- call me lazy but if I find ways to save time in the kitchen ( & wash less dishes) I WILL GO FOR IT : D
This simple fried "rice" recipe hit home for me. I made it with edamame, arugula, carrots, green onion, yellow onion, and egg and I couldn't even tell I wasn't eating rice. The best part is after a big bowl, you don't get that heavy carb feeling.. I'm full but not uncomfortably full if you know what I mean. It's delicious!
- 1/2 bag of Riced Cauliflower
- 2 Carrots (peeled and cubed)
- 1/4 Yellow Onion ( diced)
- 2 Garlic Cloves (minced)
- 2 Green Onions (chopped)
- 1/4 Cup Edamame (cooked & peeled)
- Handful of Arugula
- Sesame Oil
- 2 Eggs
Heat up a pan with a bit of sesame oil over medium high heat. Add the carrots , garlic, and onion and cook for 5 minutes (until carrots are tender). Next add the cauliflower, edamame, and arugula and cook until cauliflower softens. Then make a hole in the middle and add the eggs. Lastly stir everything together with the green onions and add drizzle of soy sauce to taste. Serve & Enjoy!
It's an easy & tasty way to get in more vegetables for the day. If you have any protein (chicken, shrimp, tofu) you can also add that to the stir fry!
